Munchkin-Cook Cooking Tips

   

CupCake Critters
(adapted from Parenting Magazine, June 2005, p 163-7)

For all Creatures, buy and cook up a store packet of cupcake mixture according to the instructions. The flavour isn't important.
   

To Make Polar Bears:

  • Cupcakes
  • White frosting
  • Dessicated coconut
  • 2 circular white candies/cupcake
  • 3 black jelly beans/cupcake
  • 1/2 large white marshmallow/cupcake

  1. Kid - Frost with white frosting and gently roll in dessicated coconut. Use two white candies to make ears, and two black jelly beans to make eyes. Use the attached image as a guide for placement. Cut a large white marshmallow in half and secure in place with extra icing for a snout. Insert another black jellybean into the marshmallow to create a nose.

To Make Piggies:

  • Cupcakes
  • White frosting
  • Pink sprinkles
  • 2 circular pink candies/cupcake
  • 2 small black candy balls/cupcake
  • 1/2 large white marshmallow/cupcake
  • 2 raisins/cupcake

  1. Kid - Frost with white frosting and gently roll in pink sprinkles. Use two pink candies to make ears, and two raisins to make eyes. Use the attached image as a guide for placement. Cut a large white marshmallow in half and secure in place with extra icing for a snout. Use the ball candies to create nostrils.

To Make Froggies:

  • Cupcakes
  • White frosting tinted green with green food coloring
  • 1 black licorice wheel/cupcake
  • 2 white life-savers/cupcake
  • 2 & 1/2 inch piece of licorice lace/cupcake

  1. Kid - Frost with green frosting. Cut the wheel in half and use to make ears. Place the life-savers in front of the wheel-ears and insert a small piece of licorice lace in each to create black dots. Use the attached image as a guide for placement. Use the rest of the lace to create a large curved mouth.

To Make Ladybugs:

  • Cupcakes
  • White frosting tinted rich red with red food coloring
  • 8-10 dark chocolate drops/cupcake
  • 2 nonpareils/cupcake
  • length of black licorice lace
  • small amount of black icing

  1. Kid - Frost with red frosting. Press the nonpareils into the front to create eyes and some licorice lace down the centre of the cupcake's top. Use the attached image as a guide for placement. Dot black icing on each nonpareil to create pupils. Press half the chocolate drops into each side of the licorice lace to make spots.

Bakeless Cookies

  • 1 tsp. Vanilla Extract
  • 2 & 1/4 cups Rolled Oats
  • 1 cup Chocolate Crispy Rice Cereal
  • 1/2 cup Chopped Peanuts
  • 1/2 cup Chocolate Chips
  • 1 & 1/2 cups of Peanut Butter
  • 1 & 1/2 cups Powdered Sugar
  • 1/2 cup Milk

  1. Mix powdered sugar thoroughly with the peanut butter into the mixing bowl. Slowly stir in the milk and vanilla extract. Mix in the oats and then add the remaining ingredients. Keep stirring until the mixture resembles cookie dough. Scoop out balls of dough and place on a baking tray. Chill for an hour.

Kebabs

  • 1 lb white chicken meat, cubed
  • 1/3 cup olive oil
  • 1/8 cup soy sauce
  • 1/8 cup honey
  • craft sticks presoaked in water for 30 minutes
  • (optional: replace half the chicken with vegetable chunks)

Dipping Sauce:
  • 1/4 cup creamy peanut butter
  • 1 1/2 tsp soy sauce
  • 1/4 cup heavy cream

OR:
  • 1/4 cup salsa
  • 1/8 cup tomato sauce
  • 1/8 cup heavy cream

  1. Kid - mix the olive oil, soy, and honey in a large bowl and then stir in the chicken chunks. If using vegetables too, divide the marinade in half and place the vegetables in another bowl with marinade. Cover and chill for 3 hours.
  2. Adult - skewer chicken (and vegetables) on the craft sticks - 1 piece to each stick. Grill on a BBQ until cooked through.
  3. Kid - mix up the sauce ingredients.

Peach Crumble Recipe

  • 1 large can sliced peaches
  • 3/4 c. brown sugar
  • 1/2 c. flour
  • 1/2 stick of softened butter
  • Cinnamon to taste

  1. Kid - layer the sliced peaches in a baking dish. Mix the brown sugar, flour and butter together in a separate bowl and spread over the peaches. Sprinkle lots of cinnamon on top of this.
  2. Adult - bake in a 350 degree F oven for 30 minutes.

  • 6 large, tart apples
  • 2 c. sugar
  • 2 c. water mini marshmallows

  1. Adult - pare, quarter and core the apples
  2. Kid - butter a baking dish, arrange the apples in it and add the water
  3. Adult - bake in a moderate oven until soft
  4. Kid - sprinkle the sugar over top
  5. Adult - simmer on top of the stove until the apples are crystal clear
  6. Kid - serve apples topped with marshmallows

Chicken Salad Sandwiches

  • 1/2 stalk celery, diced
  • 1/4 cup grated carrot
  • 2 green onions, diced
  • 4 lettuce leaves
  • 1 cups chicken, cooked and diced
  • salt and pepper
  • 1/4 cup reduced fat mayonnaise
  • 4 small dinner rolls

  1. Adult - cut the rolls in half and lightly toast.
  2. Kid - mix up the celery, carrot, green onions, chicken, salt, pepper, and mayo in a bowl.
  3. Kid - divide the chicken salad up and spread over the bottom halves of the rolls and top each with a lettuce leaf and other half of the roll.

Sunshine Salad
Strawberry Vinaigrette:

  • 1/3 cup light olive oil
  • 12 sliced strawberries
  • 2 tsp lemon juice
  • 1/2 tsp salt

Salad:
  • 12 oz baby spinach
  • 1 pint strawberries, sliced
  • 1 cup raspberries
  • 15 oz canned mandarin oranges, drained
  • 1/2 cup creamy sweet feta (optional)

  1. Adult - puree vinaigrette ingredients until smooth and chill
  2. Kid - mix salad ingredients (except feta) and lightly toss with chilled vinaigrette. Sprinkle feta over the top.
