BARAN GARNISHES
Cucumbers,carrots, turnips,
the giant mooli radish, leaves and citron rind are cut and
carved into elaborate and delicate shapes. This enhances the
presentation of sushi, and prevents the sushi from sticking
together.

GARI
This cool sharp condiment is
made from tender young ginger roots. Freshly picked and marinated
in seasoned vinegar to give it a delightful pungent taste.
It should be eaten a little at a time inbetween different
varieties of sushi to refreshen the palate
