The most skillful
- amd often the most expensive - form of sushi. The vinegared rice
is formed into an oval shape in the palm of the left hand, then
is topped by a thin smear of wasabi and a thin slice of fresh raw
seafood. Nigiri-Zushi are always served in pairs.
MAKI - ZUSHI
In this rolled suhi,
the vinegared rice is spread on sheets of toasted nori seaweed,
topped by a line of filling, rolled up then pressed in a special
bamboo mat and finally cut across into pieces.
