Ingredients: Makes 1 large  loaf,Total Time 2 1/2 hrs

Cups All purpose Flour
- 3/4 Cup whole wheat pastry flour.
-1 2/3 Cups Spring Water
-1   teaspoons Dry Active Yeast
-2  teaspoons Salt


Place all of the ingredients in your Bread Machine and set for "DOUGH ONLY". My bread machine will knead the dough and complete the first rising in 1 1/2 hours.  This dough will be very wet. DO NOT add extra flour. The dough should stay wet giving it it's unique taste and color. Once the dough has completed the first rising remove it from the bread machine and form a long loaf by pulling on each end of the dough.  Place on floured parchment paper to and allow it to rise for around 1/2 hour our or until almost double in size. After rthe second rising has completed place in a pre heated 450 degree oven for around 20 minutes or until light golden brown.  Total Time 2  1/2 hrs

This bread is baked in the small city  of Genzano located just south of Rome . It is baked there in a brick oven till it aquires a golden crust just as our does. The bread is made with a mix of whole wheat pastry flour and all purpose flour. This bread is perfect  toasted, with salads or cheese.
Special Note: This dough is very wet and hard to manage without using a bread machine for the kneading and first rising
