Ingredients: Makes 1 large large loaf,Total Time 2 1/2 hrs

-2 1/4 Durum wheat flour (Semolina)
-1 Cup + 1 Tablesp All purpose flour

-
1 1/4  Cup Spring Water
- 1 Tablesp Olive Oil
- 1 teaspon Malt syrup

-
2 1/4 teaspoons Dry Active Yeast
-2  teaspoons Salt
-Sesame seeds( for the  top of bread)

Place all of the ingredients in your Bread Machine and set for "DOUGH ONLY". My bread machine will knead the dough and complete the first rising in 1 1/2 hours.  Once the dough has completed the first rising remove it from the bread machine and  place on floured parchment paper  and shape the bread into an "S".  Allow it to rise for around 1/2 hour our or until almost double in size.  After rthe second rising has completed  spinkle the top of the dough with sesame seeds place in a pre heated 450 degree oven for around 20 minutes or until light golden brown.  Total Time 2 1/2 hrs

This golden crusted semolina bread from Sicily has sesame seeds covering the outside which gives the bread a faint peanutlike flavor . Use the best durum flour that you can find.  This bread can be made into a variety of shapes  but I like to form an "S" shape. This bread makes the best toast.
Special Note: People have been asking me about the  "Malt syrup" You ahould be able to find it in your local Health food Store.
