RECIPE: GINGERBREAD MEN

LIGHT MOLASSES

HOT WATER
VINEGAR

DIRECTIONS:

1. SIFT THE FLOUR, MEASURE AND RESIFT THREE TIMES WITH THE SODA, SPICES AND SALT.

2. CREAM THE SHORTENING AND ADD THE SUGAR IN TWO OR THREE PORTIONS, CREAMING EACH TIME UNTIL MIXTURE IS FLUFFY.

3. ADD MOLASSES AND EGG AND BEAT UNTIL SMOOTH.

4. FOLD IN THE SIFTED DRY INGREDIENTS GRADUALLY, THEN ADD LEMON RIND, WATER AND VINEGAR AND BLEND THOROUGHLY.

5. COVER DOUGH AND CHILL.

6. ROLL OUT SMALL PORTIONS OF THE CHILLED DOUGH AT A TIME ON LIGHTLY FLOURED BOARD TO 1/4 INCH THICKNESS.

7. CUT IN SHAPE USING COOKIE CUTTER.

8. TRANSFER CAREFULLY TO GREASED AND FLOURED BAKING SHEETS USING A PANCAKE TURNER TO DO THE LIFTING AND A SPATULA TO CAREFULLY SLIDE THEM OFF ONTO THE SHEET.

9. BAKE IN A 350º OVEN FOR ABOUT 20 MINUTES UNTIL COOKED THOROUGHLY AND NICELY BROWNED.
