Carnival Time...

It's Carnival time! The time to dress up, have fun and not feel guilty about eating lots of fattening food!!

Special recipe for the Carnival:

"Alexia's Chocolate & Coconut Canival Cakes"

You'll need:
Loose coconut (300 grams)
Mascarpone cheese (100 grams)
A bar of dark cooking chocolate (about 200 grams)
Ricotta cheese (preferably fresh)
Milk or Butter.

There are two different ways to melt chocolate for this recipe you can either: Bring to the boil a saucepan filled half way with water. Place a plastic bowl in the saucepan, making sure no water gets in. Break up the chocolate into small pieces and leave to melt;

or

Break the chocolate in to pieces and put into a saucepan on  alow heat adding either milk or butter and stirring all the time.

While the chocolate is melting, you can start with the rest of the ingrediensts:

In a large bowl, mix the coconut, mascarpone and ricotta together.
Once kneaded together, take small lumps at a time and roll them into small shaped balls making sure each one is about the same size.
Dip them into the now melted chocolate and place them on top of a flat surface that has been covered with either baking paper or cooking foil (so they won't stick), spaced out well from eachother and place in the fridge.

You can get munching once the chocolate has cooled!
