Creemore Springs Brewery is a great little brewery located in an old hardware store in the village of Creemore, Ontario.  Creemore is just an hour and a half north of Toronto off Airport Road.  For complete directions, click here.

At Creemore Springs Brewery, they brew beer the old fashioned way...pure and simple.  They use spring water from their very own spring located just outside of the village of Creemore.  Being a microbrewery, they brew 4 batches of beer per day.  This beer is distributed primarily in the Southern Ontario region, however there are plans to provide Creemore Springs Beer to a wider audience in the future.  Currently, Creemore Springs is building a new facility which will double their production by 2002.

The secret to their success in definitely the product itself.  Here are some of the secrets to their great brew:

  1. Spirng Water - As mentioned before, their water is extracted from a spring just a few kilometers outside of the village of Creemore.  The water is purified through a bedrock of limestone which is prevalent in the area.

  2. Hops - They import the most expensive variety in the world from the world famous hop field of Czech Republic.  In order to ensure a proper supply and quality, the hops are purchased an entire year ahead.

  3. Malt - They purchase only the finest two-row Canadian Barley Malt into which they blend small amounts of specialty malts from the US and England.  Creemore Springs Brewery uses approximately three quarters of a tonne of malt per brew.

  4. Mashing - This is a process wherein a reaction converts starch to sugars.  The ground malt is delivered into the mash mixer along with hot water.  The high calcium levels in their water protects the enzymes during mashing.

  5. Lautering - In German, this means "to filter".  The liquid (wort) is separated from the used grain.  The grain is used to filter the wort and extra spring water is sprinkled on the grain to thoroughly rinse the grain.

  6. Boiling - The wort is boiled in a traditional copper kettle fired with a direct flame.  The mixture is brought to a full rolling boil for 1 1/2 hours.  After the boil, the mixture is whirlpooled to collect the solids in the centre and to drain the wort.  Hops are added to both the kettle and to the whirlpool.

  7. Fermentation - Once the wort is pumped into the fermentation tank, the yeast is added.  At this point, the yeast converts the malt sugars to alcohol, carbon dioxide and a multitude of other compounds.  Temperature is controlled within one degree.  The fermentation period takes 7 days, after which the beer is cooled to near freezing and allowed to matured for another 2 weeks.

  8. Quality Control - The beer is constantly tested to ensure a quality product.  Each batch is tested no less than 30 times during the brewing process.

  9. Filtering - Once fermentation is complete, the yeast is removed.  

  10. Packaging - All bottles and kegs are dated as they are packaged and are moved to cold storage immediately.  To ensure freshness, they are delivered directly to all their accounts.  Creemore Springs Beer is available in 500 ml bottles or 30 & 50 L kegs.
