Chicken Divan

Easy dish to prepare ahead of time. This is one of my kid’s favorites.



1 head of broccoli
3 to 4 chicken breasts skinned and de-boned
1 cup grated cheddar cheese
1 can cream of chicken soup
½ cup mayonnaise
1 teaspoon lemon juice
1 tablespoon butter or margarine
¾ cup garlic croutons (or something similar)
 

Cut the chicken and broccoli into bite-size pieces. In a medium bowl combine the soup, mayonnaise, and lemon juice. In a 9 X 9 casserole dish, place broccoli pieces to layer the bottom. Place chicken pieces on top of broccoli. Spread the soup mixture over the top of the chicken and broccoli. Spread the grated cheddar cheese over the top. Melt the butter and crush the croutons and mix together. Then sprinkle over the top of the cheese.

Bake at 350 degrees for 50 minutes. Serve over rice or noodles.
