Honey Lime Marinated Pork Tenderloin

Lime marinade provides a delicious flavor and extra tenderness for pork tenderloin.
This recipe was provided by Chuck and Karen Magyar, and is one of our absolute favorites!


1/3 cup lime juice
¼ cup olive or vegetable oil
1 teaspoon coarsely ground pepper
½ teaspoon salt
½ teaspoon cumin
1/8 teaspoon cayenne pepper
2 tablespoon honey
1 tablespoon country-style dijon mustard
1 teaspoon finely chopped fresh garlic
1 teaspoon grated lime peel
1 (3/4 lb) pork tenderloins

This makes 6 servings.

Prepare grill: heat until coals are ash white. Meanwhile, in a medium bowl stir together all ingredients except tenderloins. Pierce tenderloins all over with a fork; place in a plastic zip-lock food bag. Pour in marinade; seal tightly. Place in 13 X 9-inch pan; let stand in refrigerator for at least 20 minutes. Remove tenderloins from marinade; reserve marinade. Place tenderloins on grill. Grill, basting with marinade and turning occasionally for 15 to 20 minutes or until meat thermometer reaches 160 degrees F. Let stand 10 minutes.

Meanwhile, heat remaining marinade in a small pan over medium heat until mixture comes to a full boil (2 to 3 minutes).

To serve, slice the tenderloins on the diagonal. Serve with marinade.
