Banana Bread

Ingredients:

  • 3 cups flour
  • 2 1/2 cups sugar
  • 1 cup oil
  • 3/4 tsl. cinnamon
  • 2 cups mashed bananas
  • 3 eggs
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 1 tsp. vanilla
  • 1 cup nuts (optional)

  1. Mix all dry ingredients
  2. Add oil & eggs
  3. Add mashed nanners, nuts & vanilla
  4. Bake at 350° for 45 minutes.
  5. Eat and enjoy!!!
The blacker your bananas, the better! This recipe is from Mr. Rener, who calls it "make your neighbors hate you banana bread". Apparently he has bananas going bad so often that he constantly bombards his neighbors with nanner bread. I'd like to be his neighbor!

Notes & Comments

For a low fat version, substitute apple sauce for oil, 3/4 cup apple sauce, 1/4 oil. We grate peeled apples here, as we can't find apple sauce. :-) Also, we cook it in the rice cooker, just put about 1/3 of the mix in and turn on the cooker. In our cooker it takes about 30 to 45 minutes. If you put too much mix, it will take a long time! You can keep pushing the cook button when the cooker switches to warm, it will cook faster, but warm also works.
