One Pan Banana Bread
(as printed in the "Colorado Bed & Breakfast Cookbook" 1996 Peppermint Press)
1/3 cup vegetable oil
1 ½ cup mashed ripe bananas
½ teaspoon vanilla
3 eggs
2 2/3 cup Bisquick
1 cup sugar
½ cup nuts, chopped (not too fine)
½ cup chocolate bits (optional)
Preheat oven to 350 F. Mix all the ingredients together and bake in a greased 9x5 inch loaf pan for 55-65 minutes. Cool 5 minutes and remove from pan. Finish coolong on a wire rack.
Here in Colorado, follow high altitude adjustments as follows:
Preheat oven to 375 F. Decrease Bisquick to 2 cups and sugar to
2/3 cup. Add ¼ cup all-purpose flour. Bake for 50-55 minutes.
