Preheat oven to 300 degrees F. In a medium bowl, combine flour, soda and salt. Whisk well. Set aside. In the large bowl of an electric mixer beat sugars at medium speed. Add butter and mix to form a grainy paste. Add eggs and vanilla. Beat at medium speed until light and fluffy. Add the flour mixture and blend at low until just combined. Add nuts and white chocolate and mix by hand. Do not overmix! Drop by rounded tablespoons onto ungreased tray. Place biscuits 5 cm apart. Bake 20-22 minutes or until edges begin to turn golden brown. Transfer biscuits to a cool surface.
Combine the dry ingredients. Melt the butter and golden syrup together. Dissolve the bicarbonate soda in the boiling water and add it to the butter/syrup mix. Add the liquid mixture to the dry ingredients and mix well. Put teaspoons of the mixture onto a greased tray. Bake for 20 minutes in a low (150C) oven. Makes about 35.
What I like about these is all the different shapes you can make them in. I've made hearts for Valentine's Day, cars for a car rally, aeroplanes to give to someone going overseas, houses for a housewarming etc.
Cream the butter and sugar. Gradually add the flour. Add the eggs and vanilla. Form the dough into a ball and chill for a couple of hours. Roll out and cut out shapes with biscuit cutters. Bake on a greased tray until golden brown.
Cream butter with sugar. Add syrup, egg and spices. Combine soda and flour and add to mixture. Knead the dough then chill in the fridge for an hour. Remove dough from fridge and knead again until it's smooth and elastic. On floured surface roll out dough to desired thickness. Cut out biscuits using various cutters and place them on a cold greased baking tray. Place in middle of 200C oven for about 5-6 minutes or until the biscuits have browned. Cool on a rack.
