1 Minute Maid
24 oz. Pure Clover Honey (clover is lighter in color and less likely to take ove
r flavor)
1 Package-Sweat Mead yeast
Added water for 5 Gallons
Primer: Organic apple/cherry/grape frozen concentrate I chose not to boil the
honey into solution. I filled the carboy with water, with some space left at th
e top, then added the honey, then the concentrates (I left them in the fridge--t
hey were liquid.) The honey seems to have fully dissolved when I checked after
6 hours. I really should have stirred it in, to make sure, though. Swiney's
Cherry Mead This batch turned out as a light pink and has a strong fruit fla
vor. It is very tart.
Any future batch should use more honey and less fruit, although this will increa
se brew time further, yet
Tasted another bottle in 7/1999 Tasted like a good, smooth, and mellowed.
It's easy to forget the long brew time if you don't brew meads much.
