Raspberry Ale

2-3 12oz. packages of Frozen Raspberries
(I forget exactly)
2 3lb. packages Munton's Spray Dried Malt Extract (plain extra light)
1 lb. "Crystal Malt" wheat (boiled in wort in hops bag)
1/4-1/2 oz. hops were boiled in sol'n--only 20 mins
Enough water to make 5 gallons
Primer: 1/2 package of "primer sugar" I'm still trying to find the dates, this
info. may have been lost in my move. Actual brew time would not apply anyway--
read notes below.
This brew wound up tasting quite good despite many mishaps. The raspberry flavo
r comes accross heavily, but not overwhelmingly. This is the favorite of most f
rom the "batch 1" brews Swiney's Raspberry Ale 1. Do NOT add frozen raspberrie
s in primary fermentation... explosive results ;-)
2. SERIOUSLY think about using a raspberry extract or concentrate; Using real
fruit causes tons of extra sediment that will clog siphons
3. Ale yeast did not ferment well in cold basement temperatures. I used heat l
amps to help, but both the slow early ferment, and the high amt's of light may h
ave affected the end flavor
