Pizza

Traditionally, pizza are made in boxed shaped machines mounted on small Japanese motorcycles.  This high-tech recipe uses a domestic oven.  A Pizza made this way is not authentic, but is quick to make and satisfying to eat.

There are some bizarre topping combinations on a menu near you.  At first seafood and seaweed seemed like a bad idea, but....  However, simple combinations of tomato, cheese, anchovies, capers, ham etc. work well.

Ingredients (serves 4)

12 oz (375 gm) Bread dough or 4 supermarket pizza bases
1 lb (500 gm) fresh tomatoes or 1 454 gm tin of chopped tomatoes
12 oz (375 gm) grated cheese
4 tablespoons of olive oil
Anchovies, capers and dried oregano according to taste

Method

Live dangerously and make your own pizza bases.  Make up the dough using half measures from the bread recipe.  When the dough has risen, divide it into four lumps.  If you don't have metal pizza trays, use a 12 inch (300 mm) square of aluminum foil, dust it lightly with flour and roll the lump of dough into a 10 inch round.   Smear a tablespoon of oil on each base, cover each one with thinly sliced tomatoes, cover these with grated cheese, garnish with the anchovies, capers.  Slide the foil onto the oven trays and bake for 15 minutes at a medium to high heat.

You could make a party piece for children or adults by giving each person with a pizza base and letting each guest make their own pizza from bowls of toppings such as cheese, ham, mushrooms, tuna and anything else you can think off.
