Last Minute Christmas Pudding If, like me, you are relaxed to the point of just getting your Christmas food underway now (with only weeks to go)- there is an alternative to buying your Christmas Pudding as part of your last-minute shopping. You probably still have lots of cards and presents to buy anyway! This is a tried and tested Suet-free pudding which doesn't take more than a few minutes to mix. You need to steam it for 3-4 hours the day you make it but so long as it isn't going to boil dry you don't need to stay with it - leaving you extra time for cards, presents etc. |

Ingredients ( Sufficient for 1.5 - 2 pt (1l.) basin) 2 oz plain flour Method Sift the dry ingredients together and add all the other ingredients mixing thoroughly to a soft consistency. Steam for 3-4 hours the first time and then 2-3 hours before using. To store put a fresh piece of paper on top and cover with a cloth/foil. Store in a cool dry place. Comment In an ideal world you would make your Christmas Pudding around Bonfire Night (5 November.) That's what used to happen apparently when everyone had more time (or were better organized?) In any case this recipe seems to work very well if you make the pudding anything up to a few days before Christmas Day (or whenever you plan to use it!) You can always make more than one and if you can't face eating them all give one to a friend - and tell them you found the recipe on this web-site!
