Dorset Apple Cake

It's one of those really old well-thumbed recipes no-one quite remembers who gave it to them, or where they first heard of it.  It's a nice solid cake and a good way of using up unwanted eating apples.

Ingredients

1/2lb (500 gm) Self raising flour
Pinch of cinnamon
Pinch of nutmeg
3-4 oz (125 gm) of caster sugar
1/2lb (250 gm) butter or margarine
1/2lb (250 gm) eating apples cored and chopped
2 Eggs beaten
2 tablespoons of soft brown sugar

9" cake tin lined with greaseproof paper

Method

Sieve flour and cinnamon into bowl and rub in butter.  Add sugar, apples and eggs.  Stir mixture into a fairly stiff dough.  Spread in tin.

Mix sugar, nutmeg and another pinch of cinnamon together and sprinkle on top of the cake.

Bake at 350 degrees, or Gas Mark 5 for 30 minutes.  Cover and continue baking for a further 30 minutes so the cake has risen and cooked through.  Test by inserting a clean skewer into cake.  If it lifts out clean the cake is ready.  As ovens vary it is wise to use this test as a final check that the cake is fully cooked after about an hour's total cooking time.
