Cheese & Tomato Salad

This is a popular starter on offer in many Italian restaurants.  The tomatoes tend to be plum or roma type and the cheese is mozzarella.  However, experience and forgetting to shop before inviting friends around has shown that the concept will tolerate a wide range of variations.

Ingredients (serves 4)

Four to six tomatoes of whatever variety appeals or is available, 4 oz (100 gm) of a cheese which can sliced, e.g. cheddar, mozzarella, edam but probably not Danish Blue or Camembert, but on the other hand....  Olive oil to drizzle and basil, parsley to garnish.

Method

Slice or pair the cheese, then slice the tomatoes.  If you are over forty, take a largish round plate and produce a neat circle of cheese slices overlapping slices of tomato.  If you are under ten, make a smiley face.  Drizzle some olive oil over the result and place the green herb appropriately.
