Spaghetti Puttanesca

One translation of Spaghetti Puttanesca is "working girl's supper" which has a variety of meanings.  Regardless of which one you choose to accept, this is a cheap, highly flavoured dish which can be made either from the contents of the store cupboard or shelves of the local corner store.

Time: 30 - 40 Minutes

Ingredients (serves 4)

1 lb (500 gm) of ripe tomatoes
One onion
A few cloves of garlic
One 50 gm tin of anchovy fillets
A couple of spoonfuls of capers
Olive Oil for frying
Black olives for garnish.

Method

Finely chop, then gently fry the onions and garlic until they are transparent.  Add the anchovies, after a couple of minutes they will disintegrate and dissolve in the oil.  Roughly chop the tomatoes and add them to the pan, together with the capers and simmer for half an hour or until the tomatoes have become a sauce.  Throw in some black olives and serve with spaghetti.

This goes well with rough red wine.
