Fried Sprouts Once described as the most hated vegetable since 1920 by a failed WC Fields impersonator (e.g. the "it was a woman that drove me to drink and I never stopped to thank her" school of humour). Boiled sprouts are part of our culture, Christmas day does not work without them and anyone with an institutional background (public school, prison, merchant navy etc.) will have fond memories of them. But there is hope. |
Contents | Ingredients (Serves 4) 1 1/2 lb (700 gm) or sprouts Method Trim the stem end of sprouts and remove the outer layer of leaves. Use a coarse grater, or even better, a French vegetable mill, to grate the sprouts. Heat, the oil in a thin frying pan (or even a wok) then fry the shredded sprouts for 10 to 15 minutes, keep them moving to prevent burning. Season generously with salt and pepper.
