Curried Potatoes

Most things have been fried of curried or turned into crisps by someone at some time, in extreme cases, the perpetrator should be given a custodial sentence.  Strange encounters between road kill and the snacks industry have given us hedgehog flavoured crisps, but I've never seen curried potato crisps. This is strange because potatoes and curry powder are a natural combination, like tarragon and chicken.

Time:  30-40 Minutes

Ingredients (Serves 4)

1 1/2 lb Potatoes (750gm)
1 Onion
4 Tablespoons of oil for frying
2 Tablespoons of Tomato puree (ketchup also works)
1 or more tablespoons of curry powder according to taste

Equipment

A large saucepan and a frying pan.

Method

Wash the potatoes, peel them if you feel the need then cut them into 1 inch cubes.  Boil them for approximately 10 - 15 minutes.  Whilst the potatoes are bubbling away, finely chop the onions and gently fry in the oil, when they are transparent, add the curry powder, use a spatchelor to work the onions and spice together for a couple of minutes.  Drain the potatoes and add them to the frying pan, turn the heat up a little cook for a further five minutes.  Start adding water until a sauce forms.  Finally add the puree or ketchup and cook for a few more minutes, keeping the contents of the frying pan moving to prevent sticking and burning.
