Queen of Puddings Another recipe that is hard to source - probably someone's Granny had occasion to make a pudding out of a few ingredients - and this is the veritable Queen of a result! |
Contents | Ingredients 3oz/120g breadcrumbs Method Put the breadcrumbs and sugar in a bowl and pour on the hot milk. Leave to soak for a few minutes. Separate the egg yolks and whites, beat the yolks and add to the mixture. Pour into a greased 2 pint/1litre pie-dish, and cook at Gas Mark 4-5, 350deg. F, 180deg. C until set. Remove from heat and allow to stand for a few minutes. Meanwhile beat the egg whites and make a meringue with 2-4 Tablespoon of sugar. Soften the jam by warming or adding a little hot water. Spread jam on top of the pudding, and cover with meringue. Bake until the meringue is lightly colored (15-20minutes). Serve hot or cold.
