Tomato Soup This is a genuine Realms original. Soups works well for weekend lunches. In general, soup making involves taking a solid object normally eaten with a fork and turning it into a liquid which can be eaten with a spoon. Contemplating this paradox with a glass of wine in hand only increases the pleasure this recipe brings. Almost any form of tomato can be used (including tinned), but the red plum variety works provide an attractive colour whilst some continental imports produce something that is a wimpish pink. |
Contents | Time: 15 Minutes preparation, 45 minutes cooking Ingredients (Serves 4) 1 lb (500 gm) of Tomatoes Equipment 2 litre saucepan and food processor Method Finely chop the onion and fry gently in the olive oil. Whilst this is taking place, Roughly chop the tomatoes. Assuming that the capacity of you food processor is one pint, put half the tomatoes into the unit, top up with water to give a total volume of 1 pint, add a tablespoon of flour. Let the processor churn away for a minute or until the flour is totally combined. Add to onions, then repeat with the second batch of tomatoes and add that lot to the pan. Bring to the boil and then simmer gently for 45 minutes adding the Basil in the last five minute of cooking. Comment A variation is add some garlic to the onion and replace the basil with parsley.
