Waldorf Salad

It would be interesting to know if Waldorf Salad was an inspired combination of ingredients or a bit of quick thinking by an underling faced with a demand for salad and only cocktail party leftovers to work with.  The term Waldorf Salad generally means salad made with lumpy bits, but walnuts, apples and celery feature in most definitions.

Shelling a pound of walnuts is a great way of dealing with frustration.  Nut crackers are for wimps, a hammer is far more fun.

Ingredients (serves 4)

1 lb (500 gm) Unshelled Walnuts
1 Celery Stem
2 Eating Apples (sour or sweet according to taste)
2 Tablespoons Mayonnaise

Method

Shell the walnuts using the minimum of force and taking care to ensure that kernel and shell are separated.  Core and slice the apples.  When you get to the celery, cast economy to the wind and donate the outer stalks to a domestic rodent (your partner, guinea pig etc.) if they look stringy.  Slice the remaining stalks into 1/4 inch lengths.  Place the lumpy bits into the serving bowl and stir in the mayonnaise.

You can make a "fruiter" version by adding dates or sultanas.
