Fruit Fool

This is a good way to use soft fruit (or fruit that has been made soft) and cream in the summer.  For cream, you can always substitute yoghurt.

Time:  As little as 30 to 45 minutes depending on the fruit.

Ingredients (serves 4 - 6)

1lb/500 gm rhubarb or soft fruit (strawberries, raspberries) etc.
Sugar for taste
10 fl oz/243 ml whipping cream

Equipment

Large pan for fruit that needs softening, sieve and bowl for soft fruit, bowl(s) for serving.

Method

Using Rhubarb/Gooseberries:   peel or top and tail the fruit and soften in a large pan with a little water and sugar to taste. Once soft leave to cool, and whip the cream in the meantime using a mixer or beaters.  Mix in the fruit and put into individual or a large serving bowl(s).  You can add ginger or extra sugar to the finished product as desired.  

Using soft fruit - strawberries/raspberries etc.   These need to be pulped - either in a blender or through a sieve into a bowl with a wooden spoon.  Then mix with the cream as above.  Keep a few samples of the fruit for decoration.

Chill the fool for 30 mins or so before serving.

A nice clean tasting fruit and cream (yoghurt) pudding for summer.
