Avocado Omelette Breakfast
for four persons

     Omelette - eight (8) eggs, quarter (1/4) cup milk, two (2) avocados, salt and pepper.
- Crack them eggs into a bowl
- Pour in some milk
- Stir it around with a fork so it's all mixed together
- Pour a moderate amount of mixture into a hot buttered skillet so it sizzles
- Cut an avocado in half
- Twist the two halves apart
- Thinly slice the avocado in their skins
- Scoop out with a large wide spoon
- Turn eggs
- Top with avocado as shown above
- Salt and pepper to taste
Potatoes - six (6) medium sized potatoes
- Wash
- Cut into thin matchsticks
- Lightly coat in olive oil
- Bake until brown
Veggie Sausage - premade out of the box
- these were Morning Star
- follow directions on the package
Coffee - 1 1/2 tablespoons per cup
- bring water to boil
- remove from flame and let stand for 30 seconds
- pour water over grounds
