From ammonia, bacteria feed on the ammonia that was fixed, at first,
from the atmosphere. Believe it.

This chemical is not useful to plants, yet.

The next cycle, Nitrate, is the most useful to plants.
Nitrite is NO₂. Nitro-Bacteria have to metabolize this to NO₃.
The useful nutrient for plants and our food supply. Do you see it ?

Nitrogen Dioxide . . . Water . . and . . Ozone . . a bad health problem !!

What about Nitrite to cure meat ?
