LASSI

1 cup yogurt
1 cup water
3 Tablesp. sugar
crushed ice

Method:

1. Blend all ingredients until smooth.
2.Add ice an serve.
* Yields 2 cups.

4 bananas, mashed
3 cups milk
4 Tablesp. sugar
1 drop vanilla essence (optional)

Method:

1.Blend all ingredients until smooth.
* Yields 3 cups.

LEMONADE

4 lemons
2 1/2 cups cold water
3 Tablesp. sugar
1/2 cup hot water

Method:

1. Squeeze lemons.
2. Dissolve sugar in hot water.
3. Stir in lemon juice, cold water and ice.
* Yields 3 cups.

LEMON-ORANGE SQUASH

5 lemons, sliced thin
10 oranges, sliced thin
7 cups water
2 teasp. citric acid
3 cups sugar

Method:

1. In a large pot, boil all ingredients 1 minute.
2. Steep 12 hours.
3. Strain away orange and lemon peels.
4. Dilute to taste.
5. Store in air-tight containers.
* Yields 7 cups.

GRAPEFRUIT JUICE

2 grapefruit
1/2 cup hot water
3 Tablesp. sugar
1 1/2 cup cold water

Method:

1. Squeeze grapefruits.
2. Dissolve sugar in hot water. Cool.
3. Stir in grape fruit juice and cold water.
* Yields 2 cups.

ORANGE JUICE

6 oranges
1 1/2 cups cold water
2 1/2 Tablesp. sugar
1/2 cup hot water
ice

Method:

1. Squeeze oranges.
2. Dissolve sugar in hot water. Cool.
3. Stir in orange juice, cold water an ice. (If oranges are squeezed through a juice machine, add no water or sugar).
* Yields 2 cups.

PINEAPPLE JUICE

1 pineapple, cubed
1 1/2 cup cold water
2 Tablesp. sugar
1/2 cup hot water

Method:

1. Dissolve sugar in hot water. Cool.
2. Blend all ingredients. Add ice.
If blender is not available:
1. Put pineapples into a cloth.
2. Knead and squeeze out juice.
3. Whisk into other ingredients.
* Yields 2 cups.

GRAPE JUICE

2 cups blue grapes
1/2 cup cold water
2 Tablesp. sugar
1/2 cup hot water

Method:

1. Dissolve sugar in hot water.
2. Blend all ingredients.
3.Press blended juice through a sieve to strain.
If blender is not available:
1. Put grapes into a cloth.
2. Knead and squeeze out juice.
3. Whisk into other ingredients.
4. Add ice.
* Yields 2 cups.

APPLE JUICE

4 large apples
3/4 cup cold water
2 Tablesp. sugar
1/4 cup hot water

Method:

1. Dissolve sugar in hot water.
2. Grate apples on smallest grater blade. Pulp should be liquid and mushy.
3. Pour into a cloth.
4. Squeeze all juice out of pulp in cloth.
5. Chill. (If apples are squeezed through a juice machine, add no water or sugar).
* Yields 2 cups.

RUSSIAN TEA

1 lemon
2 oranges
4 cups water
1 Tablesp. whole cloves
1/2 Tablesp. cinnamon, ground
1/2 Tablesp. ginger powder
1/4 teasp. tumeric
1 1/2 cup raisins
4 Tablesp. sugar

Method:

1. Squeeze lemon.
2. Squeeze 1 1/2 the oranges.
3. Slice remaining 1/2 orange into very thin slices.
4. Boil all ingredients. Steep 5 minutes. Do not strain.
5. Serve with raisins and orange slices.
* Yields 4 cups.

SPICED TEA FOR COUGHS

4 cups water
2 teasp. whole cloves
2 teasp. whole cinnamon bark
1 teasp. fresh ginger, grated
1 teasp. cardamon pods
1 teasp. fennel seeds
juice from 1 lemon
4 Tablesp. honey

Method:

1. Boil all ingredients except lemon juice and honey.
2. Reduce heat. Simmer 5 minutes.
3. Stir in lemon Juice and honey.
4. Strain through sieve. Serve hot.
* Yields 4 cups.

BARLEY CUP

1/2 cup whole barley grains
1/4 cup whole wheat grains
4 cups milk
4 Tablesp. sugar
1 Tablesp. dark brown sugar or molasses

Method:

1. Dry roast barley an wheat grains until they pop and brown.
2. Add milk and sugar. Boil 5 minutes.
3. Reduce heat. Simmer 3 minutes.
4. Strain. Serve hot.
* Yields 4 cups.

RICE WATER

1 Tablesp. rice
1 stick cinnamon bark
4 cups water
honey or sugar to taste

Method:

1. Boil rice, water an cinnamon.
2. Simmer 1 hour. Strain.
3. Stir in sugar or honey. Cool.
4. Serve at home temperature.
(This can be used as a remedy for diarrhea.)
* Yields 4 cups.

BARLEY WATER

1/2 cup whole barley grains
4 cups water
1 lemon
1/4 cup sugar

Method:

1. Squeeze lemon. Slice peel.
2. Boil barley, water, and peel.
3. Reduce heat. Simmer 1 hour.
4. Stir in sugar until it dissolves.
5. Strain. Stir in lemon juice.
6. Cool. Add ice.
* Yields 4 cups.

SPROUTED WHEAT WATER

1 cup whole wheat grains
3 cups water

Method:

1. Combine wheat grains and water.
2. Cover. Soak 12 hours. (Do not soak longer or they will root.)
3. Strain. Save water and grains separately.
4. Add another 3 cups fresh water to soaked grains.
5. Soak 12 hours. Strain. Save water.
6. Do not use wheat grains after making 2 bathes of sprouted Wheat Water.
(This drink enhance digestion.)
* Yields 6 cups.

SPARKLING LEMONADE

1 cup boiling water
3-inch piece of fresh ginger, grated fine.
3 cups cold water
juice from 4 lemons
ice

Method:

1. Pour boiling water over grated ginger.
2. Stir in sugar.
3. Steep 10 minutes. Strain.
4. Stir in  in cold water, lemon juice, and ice.
(This is a  refreshing tonic to relieve stomach upset caused by over-eating rich foods.)
* Yields 4 cups.

DRIED FRUIT JUICE

1 cups raisins, figs or prunes
2 cups water

Method:

1. Soak raisins in water 8 hours.
2. Strain away juice and serve.
* Yields 2 cups.

COCONUT MILK

1 cup fresh or desiccated coconut
2 cups boiling water
2 Tablesp. sugar or honey
1/2 teasp. cardamon powder or vanilla

Method:

1. Blend coconut with boiling water.
2. Steep 1 hour.
3. Strain & press through sieve saving coconut milk.
4. Stir in sugar and spices.
5. Serve hot or cold.
* Yields 2 cups.

ALMOND MILK

1 cup almonds (soak 8 hours)
2 cups boiling water
2 Tablesp. sugar or honey
1/2 teasp. almond essence, cinnamon or cardamon powder

Method:

1. Blend almonds with boiling water until creamy.
2. Stir in sugar and slices.
3. Strain through a sieve or leave thick.
4. Serve hot or cold.
* Yields 2 cups.

ICED MINT TEA

4 cups water
4 mint teabags or 4 Tablesp. dried mint leaves
3 Tablesp. sugar
ice

Method:

1. Bring water to a boil.
2. Add mint leaves and sugar.
3. Steep 15 minutes.
4. Strain away leaves. Cool completely.
5. Add ice. Serve.
* Yields 4 cups.
