Steam the rice.
Heat the oil and saute the seasoned prawns, pork, chicken and ham.
Add celery, green and red pepper and green peas.
Add sesame oil and saute the onions and garlic.
Add sambal and soy sauce.
Add the rice and mix gently.
Adjust seasoning and fold in the omelette stripes.
Arrange on a gratin dish and sprinkle with spring onions.
Garnish with cucumbers on the side.
