Mushroom Quesadillas or Quesadillas de Hongos - Easy Mexican Recipe For Mexican Main Course
- 6 to 8 corn tortillas
- 4 cups mushrooms (sliced)
- 2 tbsp vegetable oil
- extra oil for deep frying
- 2 to 3 garlic cloves (chopped)
- 2 to 3 Serrano chilies (minced)
- 1/2 cup sour cream or Mexican cream
- 1/2 cup fresh cilantro (chopped)
- 1/2 cup onion (chopped)

How to make Mushroom Quesadillas or Quesadillas de Hongos:
- In a saucepan, heat 2 tbsp oil over medium heat
- Add in onion and garlic, saute till onion is translucent
- Stir in chillies and mushrooms till mushrooms are barely cooked (2 to 3 mins)
- Remove from heat
- Add in sour cream and stir in chopped fresh cilantro
- Set aside but keep warm
- Heat oil in a deep frying pan
- Spoon 1 to 2 tbsp of the mushroom mix into 1/2 tortilla
- Fold over remaining 1/2 to form the quesadilla and press edges together
- Fry each one in the hot oil (turn once) till golden brown
- Drain on paper towel and serve at once
TIP: For a healthier option, bake the quesadilla in a pre-heated oven instead of frying.
