Green Chicken (Pollo Verde) - Easy Mexican Recipe For Mexican Spicy Chicken
- 3 whole chicken breasts (skinned, boned, halved, cut into slices)
- 1 cup sour cream or low fat yogurt
- 1 cup coriander leaves (chopped)
- 3 cloves garlic (chopped)
- 4 romaine lettuce leaves (shredded)
- 1 can Mexican green tomatoes with liquid
- 1 canned chile jalapeno (drained, seeded & quartered)
- 4 scallions with greens (cut into 1 inch)
- salt & pepper to taste

How to make Green Chicken (Pollo Verde):
- In a food processor, combine the coriander, onion, garlic, green tomatoes (including liquid), scallions, chilli,
salt & pepper
- Process to a coarse puree
- Taste for seasoning
- Pour the puree into a large pan, bring to simmer and cook, covered for 30 mins
- Add chicken pieces and continue to cook for 20 mins more
- Remove chicken and sauce from heat, mix in sour cream
- Return to low heat and heat through
- Transfer on a warm serving platter
