Green Chicken (Pollo Verde) - Easy Mexican Recipe For Mexican Spicy Chicken


  • 3 whole chicken breasts (skinned, boned, halved, cut into slices)
  • 1 cup sour cream or low fat yogurt
  • 1 cup coriander leaves (chopped)
  • 3 cloves garlic (chopped)
  • 4 romaine lettuce leaves (shredded)
  • 1 can Mexican green tomatoes with liquid
  • 1 canned chile jalapeno (drained, seeded & quartered)
  • 4 scallions with greens (cut into 1 inch)
  • salt & pepper to taste


How to make Green Chicken (Pollo Verde):


  • In a food processor, combine the coriander, onion, garlic, green tomatoes (including liquid), scallions, chilli, salt & pepper
  • Process to a coarse puree
  • Taste for seasoning
  • Pour the puree into a large pan, bring to simmer and cook, covered for 30 mins
  • Add chicken pieces and continue to cook for 20 mins more
  • Remove chicken and sauce from heat, mix in sour cream
  • Return to low heat and heat through
  • Transfer on a warm serving platter
