Rice with Seafood or Arroz con Mariscos - Easy Mexican Recipe For Mexican Main Course


  • 2 cups long-grained rice
  • 2 lb octopus (cleaned)
  • 1 lb clams (in shell)
  • 1 lb fish fillets
  • 12 medium shrimps in shells
  • 1 cup water
  • 2 cloves garlic
  • 1 small onion
  • 1/2 cup oil
  • 3 cup hot water
  • 1 spring parsley
  • 2 tsp salt
  • 3 chile poblanos (roasted - membranes removed & cut into strips)
To Roast Chili Method Over Direct Heat: This is the most commonly used method. Place the chiles directly over medium flame on a gas stove. Turn the chiles with tongs till entire skin looks 'charred' or covered with black blisters. (about 5 to 10 mins) Place chiles in plastic bag and close bag. Cover bag with damp cloth for 10 to 15 mins. (letting chiles sweat) Afterwards, peel charred skin away. Other methods: broiler, oil or skillet.

How to make Rice with Seafood or Arroz con Mariscos:


  • Use a pressure cooker to cook the octopus using 1/2 cup of water for 10 mins or till tender
  • Alternatively: use a pot with 6 cups water, bring to boil, cover and simmer for 45 to 60 mins
  • Drain octopus, cut off any suckers and thick skin
  • Cut octopus into pieces and set aside
  • Steam clams in remaining 1/2 cup water in a covered pot just till they open
  • Strain, reserve juices and set aside
  • In a blender, puree garlic, onion and tomatoes, strain and set aside
  • heat oil in small paella pan or large casserole dish
  • Add rice and saute till grains separate
  • Drain off excess oil
  • Add pureed tomatoes and cook, stirring constantly for 2 more mins
  • Add hot water, juice of clams and parsley and salt
  • When mixture come to a boil, add shrimp, fish and clams
  • Cook, covered over low heat for 10 mins
  • Adjust seasoning
  • Add octopus and chiles poblanos
  • Cook, covered for 10 mins or till rice is tender but not mushy
  • If necessary, add more water
