As appetizers, oysters make a wonderful edition. This is an easy and elegant dish that requires very little
effort or time. You can get those mini-loaves of bread that are sometimes already toasted from bakeeries.
Baked Oysters on Toast - Easy Mexican Recipe For Mexican Starter Dish Course
- 2 slices bacon (chopped)
- 1 tomato (chopped)
- 1 to 2 serrano chillies (chopped fine)
- 1/4 cup onion (chopped)
- 1 tbsp tomato sauce
- 1 tbsp fresh parsley (chopped)
- 1 dozen fresh oysters (shelled)
- salt
- pepper
- 2 regular slices or 8 mini bread (toasted & buttered)
- 1/4 cup Mozzarella cheese (grated)
TIP: If you choose to buy oysters in a jar, look for ones that have no bits of shell
floating around and that the liquid is CLEAR, not cloudy.

How to make Baked Oysters on Toast:
- Preheat oven to moderate
- In a small skillet, fry the chopped bacon till cooked through but not crisp
- Add in onion, tomato, tomato sauce, chillies and parsley till sauce has thickened slightly (5 to 8 mins)
- Add in the oysters
- Season with a dash of salt and pepper
- Continue to cook till oysters are cooked (2 to 4 mins)
- Divide the osyters between the slices of toast
- Sprinkle the grated cheese over them
- Bake in oven till cheese has melted (5 to 8 mins)
- Serve hot
