Occupation: Student, Okonomiyaki chef
Most Outstanding Appearance: Wears a giant size combat spatula on her back whenever going out or at school. Mostly wears traditional cooking clothing while fighting. Dresses as a guy while at school.

Likes: Ranma/Ranchan, Cooking, Business, Romantic boat rides, Any romantic interlude with Ranma, Acting like a girl whenever possible, A good fight that involves Ranma
Dislikes: Akane, Shampoo, Kodachi... (Any girl that wants Ranma) Forceful guys, Tsubasa
Future dream: Live as an okonomiyaki chef, and raise a family with Ranma as her husband
Family: - Father: An okonomiyaki chef, who bargained with Genma to take Ukyou with him
Others: Wears a male uniform when going to school, and she is considered a transvestite by some people. When in combat or in cooking, she always uses sharp-edged spatulas. Her main weapon is a giant spatula that nearly extends her full body height. Speaks in an almost southern accent, calling people "Sugar" More cuter than Akane by Ranma's point of view, and considered the 'cute' fiancee. Owns a restaurant named after her childhood nickname "Ucchan's"
Problems: Wants Ranma for a fiancee, he only thinks of her as a friend. Her other rivals, Shampoo, Kodachi and Akane has a much better chance at catching Ranma, they use stealth, trechery and brute strength (respectively) to get Ranma's attention, which Ukyou only has her friendship to go through. Tsubasa! (enough said)

Here's a little introduction to how Ukyou got caught in Ranma's fiancee web:

As a young girl of five, Ukyou met Ranma one day as Ranma ran up and stole some okonomiyaki from her father's cart. Everyday, Ukyou challenged Ranma in hopes of being as good as him, everytime, she failed, but the bonds of friendship grew with each battle. But, friendship didn't last forever, when Genma promised to take Ukyou as Ranma's fiancee in exchange for Ukyou's father's Okonomiyaki cart. Genma ended up taking the cart, and leaving Ukyou behind. Bend on revenge, Ukyou lets go of her female side, and went after Ranma to avenge her spirit. Upon arriving at Nerima, Ukyou challenges Ranma to a duel. Ranma had no choice but to accept. During the battle, Ranma suddenly discovered Ukyou was a girl! All this time, Ranma thought Ukyou was a guy. Genma finally confessed about the fiancee business. And after Ukyou sees that Ranma and Akane are not getting along very well, she decided to let by gones be by gones and started to pursue Ranma for his heart.

This picture is one which I... um... okay, let's just say this is the scene which made me fall for Ukyou. Later on, as I understood her character, I grew more attached to her.

From Ranma 1/2 The Movie #2: Nihao My Concubine. Ryoga searches for Akane, finds Ukyou and Salrutolo (however you spell his name!) Ukyou wants to be rescued, preferably by Ranma, but "beggers can't be choosers" and ask Ryoga to save her.
