Creamed Beef Soup
4 Servings
1/4 cup butter
1 cup chopped onions
1 cup chopped celery
2 1/4 cups cubed potatoes
2 cups coarsely chopped cabbage
1 1/2 cups sliced carrots
1/4 teaspoon salt
dash pepper
3 cups water or chicken broth
left over beef, shredded
1 cup heavy cream
crackers
1. In large pot over medium heat, melt butter and cook
onion and celery.
2. Add potatoes, cabbage, carrots, salt, pepper and water
3. Stir in beef and heavy cream; simmer 30 minutes.
Serve with crackers.
