Hiyashi (cold) Ramen

4 fresh ramen noodles (not deep-fried instant type)

1 cup chicken broth
6 tablespoons soy sauce
3 tablespoons sugar
4 tablespoons rice vinegar
1/2 teasponn salt
1 tablespoon sesame seed oil

cooked chicken, shredded
very thinly fried egg omlet, shredded
cucumber, thinly jullienned
tomatoes, diced

1. In saucepan, heat all the sauce ingredients except sesame seed
oil over high heat until boiling. Remove from heat.
When has cooled, add sesame oil and refrigerate until cold.
2. In a large pot, boil water and cook noodles according to the
package directions; drain and immediately rince in cold water;
drain again.
3. Transfer drained noodles in each plate, arrange toppings.
Whisk the sauce again and pour over noodles.
