Chicken Adobo or Chicken and Pork Adobo

4 Servings
1 lb. chicken pieces
3 tablespoons soy sauce
2 tablespoons patis (fish sauce)
1/3 cup vinegar
5 bay leaves
1 head garlic, minced
Salt
Pepper
Dash of garlic powder
1 tablespoon sesame oil
1/3 cup oil
Combine first ten ingredient reserving half of the minced
garlic. Simmer on low heat until chicken pieces are tender.
Strain the liquid/broth from pot.
Add the remaining garlic and oil. Pan fry until chicken and
garlic are toasty brown. Add the liquid/broth and simmer for
another 10 min. Serve.
Note: As always, when dealing with garlic, MAKE SURE YOU DO NOT
BURN THE GARLIC!
You can also use a combination of chicken and pork or pork and
beef or beef and chicken. Just cook accordingly.
