Fried Chicken Japanese Style

This is a common dish in a BENTO-BOX
(Japanese lunch box). It's very tasty even cold.


4 Servings



2 lbs. chicken thigh, boned and cut in bite size

****** marinade **********
2 tablespoons sake or dry sherry
2 tablespoons soy sauce
1 teaspoon sugar
1/2 teaspoon salt
1 clove garlic, minced
1 teaspoon grated fresh ginger

1 egg, slightly beaten
1 cup all-purpose flour
1/2 cup potato starch or corn starch


1. Mix the marinade in a ziploc bag. Add the chicken and
marinate for 1 hour to over night (in refrigerator).

2. Discard liquid and add egg. Mix egg and chicken by rubbing
through the bag. Let stand 20 min..

3. Meanwhile, mix flour and potato starch in another ziploc bag.

4. Heat about 3-inches oil to 325 degrees in deep flyer.

5. Drain chicken and coat with flour mixture in the bag.

6. Fry chicken until golden and cooked through.

7. Drain on paper towel.
