Fried Rice

4 Servings
3 tablespoons vegetable oil
4 eggs
4 to 6 slices bacon, cut in bite size
1/2 can bamboo shoots, chopped
2 scallion, chopped
4 cups cooked rice
1/4 cup cooded green peas
1. Heat oil in a wok or skillet over high heat;
stir in eggs and cook until almost set. Transfer the
eggs in a bowl, keeping as much oil in wok as possible.
2. Put the wok back on the stove over high heat;
cook bacon until almost crisp; add bamboo shoots and
scallion; then add rice stirring frequently until well
combined. Taste with salt, pepper and soy sauce.
3. Stir in cooked eggs and peas.
