Real Sukiyaki

Sukiyaki is normally served
for spcial occasions in Japan. It is fun to make
at the table. Plan "Real Sukiyaki" for your next
home party!


4 Servings



3 tablespoons ... lard or vegetable oil
1 to 3 lbs. ... beef rib eye, very thinly sliced
1/4 to 1/3 cup ... sugar
1/2 cup ... soy sauce
1/3 cup ... sake
1 cup ... green onion, thinly sliced
8 ... shiitake mushrooms, trimmed
1 ... firm tofu, cubed
1/2 ... Chinese cabbage, cut into bite size
1 bunch ... chrysanthemum leaves or watercress, discard stems


1. Over table-top portable burner, heat sukiyaki pot
or large skillet and heat lard or oil over high heat.

2. Add a couple of rib eye slices and sprinkle with some
of sugar. Stir in soy sauce and sake.

3. Add all the vegetables. As moisture comes out, adjust
the taste with sugar or soy sauce. Add 2 to 3 pieces of
beef while serving cooked ones in small individual bowls.



Of course, you can cook sukiyaki on stove top.
But don't cook all the ingredients at once...it makes
meat very tough.
