Sunomono Salad

********Sunomono Base********
1 1/2 tablespoons ... rice vinegar
1 tablespoon ... soy sauce
1/2 tablespoon ... sugar
2 tablespoons ... fish (dashi) stock or water

1/2 package ...bean threads, cook, rinse in cold water and drain
1 cup ... cooked salad shrimps
1/2 ... Japanese cucumber or 1/4 regular cucumber
1 small piece ... fresh ginger (optional), very thinly julienned.


1. In small bowl, whisk "Base" ingredients together.
Set aside.

2. Slice cucumber very thinly and rub with little bit of salt;
squeeze out exess water well.
Cut cooked bean thread in bite size.

3. In medium bowl, combine all ingredients including base
Transfer into small individual bowls.

You can use most of any ingredients for sunomono!
Try boiled squid, sea weed or even vermicelli!
