GRILLED CATFISH

      Catfish fillets

      Mc Cormick Creole seasoning

      Melted butter or butter spray

      Club rolls and tartar sauce for sandwich

      Spray grill with Pam.

      Preheat gas grill for five minutes.

      Dip fillets in melted butter.
      Sprinkle with Creole seasoning to taste on each side.

      Grill fillets five minutes.
      Turn carefully and grill for five more minutes.

      Serve on club rolls with tartar sauce.
      (lettuce and tomato if desired)

      OR AS AN ENTRÉE SERVE FILLETS WITH
      ORANGE RICE OR BUTTER HERB RICE.
      OKRA PATTIES OR STEAMED GREEN BEANS ARE GOOD ALSO.

      ORANGE RICE

      Serves 6

      2 Tb. butter

      2 Tb. vegetable oil

      1 medium onion , chopped

      1 cup raw white rice

      Grated rind of 1 orange

      1-1/4 cups chicken broth

      1 cup fresh or frozen orange juice

      Melt butter and oil in a large saucepan.
      Saute the onion until soft and translucent but not brown.

      Stir in rice. Cook and stir over medium heat about 5 minutes.

      Add the orange rind, chicken stock, and orange juice.
      Bring to a gentle boil.
      Cover and simmer on low about 25 minutes.

      (The rice may be prepared in advance and refrigerated.)
      To reheat, place covered dish in microwave oven for 5-7 minutes
      or cover in top of double boiler over boiling water.
      Stir with a fork to separate the grains.
