Cornish Hens with Cranberry-Orange Sauce
- 2 cornish hens
- 1 can whole-berry cranberry sauce
- 1 small can mandarin oranges
- 1/4 stick butter
- 1 teaspoon salt
- 1 teaspoon pepper
Wash hens. Rub them all over with soft
butter. Sprinkle 1 teaspoon salt and 1 teaspoon pepper on
them.Place on a rack in oven-proof dish or pan. This
allows the fat to drain from them.
Cover with foil. Bake at 375 degrees until almost done.
Add 1 can whole-berry cranberry sauce and 1 can
mandarin oranges. Put them inside hens, on top,
and all around them. Cook uncovered for another
30 minutes or until done.
