Cornish Hens with
Cranberry-Orange Sauce


  • 2 cornish hens
  • 1 can whole-berry cranberry sauce
  • 1 small can mandarin oranges
  • 1/4 stick butter
  • 1 teaspoon salt
  • 1 teaspoon pepper


Wash hens. Rub them all over with soft
butter. Sprinkle 1 teaspoon salt and 1 teaspoon
pepper on them.Place on a rack in oven-proof dish or pan.
This allows the fat to drain from them. Cover with foil.
Bake at 375 degrees until almost done.

Add 1 can whole-berry cranberry sauce and 1 can
mandarin oranges. Put them inside hens, on top,
and all around them. Cook uncovered for another
30 minutes or until done.
