FRIED APPLE PIES from the kitchen of Nenner DeMoss PASTRY:
1/2 cup Crisco shortening 2/3 cup boiling water (Be sure water is boiling.) Mix together until shortening is melted.
Mix the following: 2 cups plain flour 1 rounded teaspoon salt 1 rounded teaspoon baking powder
Add water mixture and stir with a fork until it is mixed. Pinch off dough about the size of a large walnut; Roll out to size of a saucer. Place a large tablespoon of pie filling (below) and seal edges; prick pies with fork about six times before frying in a small amount of vegetable oil. Place pricked-side up. -------------------------------------------------------------- APPLE PIE FILLING 2-1/2 cups canned sliced apples 3/4 cup light brown sugar 1 teaspoon ground cinnamon 1/2 teaspoon ground nutmeg l/4 teaspoon ground allspice 1 Tablespoon flour 1/4 cup seedless raisins
Drain apple slices; dice. Combine all ingredients and use to fill fried pie pastry. ---------------------------------------------------------------------------------------
