STRAWBERRY PIE


CRUST:

1/2 cup oil
1/3 cup water
1-1/2 cups flour

Heat water in the microwave.
Add oil. Mix in flour.

Spread crust-mixture in a
9-inch pie plate.
Make small slits in crust.
Bake at 400 degrees for
10-15 minutes or until brown.

OPTIONAL CRUST:
2 cups flour
2/3 cup shortening
1 tsp. salt
4-6 Tablespoons cold water.
Mix together and roll out on
floured surface.
Makes 2 (9-inch) crusts.

PIE:

1 cup sugar
3 heaping Tablespoons corn starch
1/4 teaspoon salt
1 cup water

Heat in a small saucepan until
mixture thickens. Remove from fire.
Add:
1/4 teaspoon red food coloring.
Cool completely.

1 pint strawberries (Use firm,
not-too-ripe - can use 1/2 pint more
if desired) Wash strawberries.
Drain on paper towels.
Be sure there's no juice
to thin filling.

Place strawberries in a
BAKED 9-inch crust.
Spoon the filling between and over
the strawberries.
Don't stir.
Top with Whipped Topping.
