Hobo foil pouches

1/4 to 1/2 ground beef, stew meat, or shopped chicken, depending on how hungry you are
1/2 cup of can or frozen mixed vegetables
2 heaping spoons of one or more of the following: cream of mushroom, tomato, cream of celery, cream of chicken soup, tomato sauce, catsup, A-1sauce or any of your favorite sauces.
1 tablespoon chopped onion, optional
salt, pepper and other seasoning to taste
a large piece of foil folded double, to prevent scorching and to give more strength to the foil.

Fold the foil in half, crumble ground beef or other meat loosely on to the center of the foil, meat cooks quicker if not in a big clump. Spoon veggies, sauce and onions on top of meat and add seasonings. Fold the foil over the meat and veggie mixture, then fold edges together to seal into a pouch. Cook over a fire using a grate or cook on a grill, turning a couple of times to cook evenly, apporximately 25-30 minutes. Use care when opening the pouch, a lot of steam will escape the opening.

Hint: use heavy gloves or tongs to carefully turn the pouch while cooking. Also you can add raw potatos with or instead of the vegetables. Keep cold until ready to cook, these can be made at home before the campout and make an easy, mess free meal.

 

Dutch Oven Stew

1 pound stew meat
4 large potatoes, peeled and cubed
1/2 medium-sized onion
3-4 carrots, peeled and sliced
2-3 stalks of celery, chopped
1 can tomato soup
3/4 soup can of water
salt and pepper to taste

Combine everything in the dutch oven, cook over medium heat for 4 hours. Stir occasionally. You may have to add a little more water if it looks too dry. Makes 4 good sized servings. This is also good if you add a little garlic to it.

Dutch Oven Dump Cake

1/4 lb. butter or margarine
18-oz package yellow or spice cake mix
1 can of fruit (peaches, arpicots, mixed fruit or cherry or apple pie filling

Melt Butter in the bottom of the dutch oven, pour in fruit. Dump dry cake mix over the top of fruit and gently spread it out. Do don't mix together.
Put lid on Dutch oven and place over coals: also put coals on the top of the lid. Bake about 10 minutes then check to see if the fruit is bubbling up through the cake mix. When it does, remove from fire but leave coals on the lid until the batter has browned. Slice and serve.
