           Well folks if you haven't heard, I was just diagnosed with Type 2 Diabetes.  So I will be featuring recipes designed for a new low sugar and low fat content.  I hope you will enjoy these new recipes, I promise they will be very tasty and fun to make.
    CHEESY
  ASPARAGUS -
   RICE BAKE
A wonderful combination of cheese, asparagus and rice creates a treat for your taste buds.

2 cups chopped fresh asparagus
1 cup water
2 cups cooked rice
1 4/3 (one 15-oz can_ Hunts Chunky Tomato Sauce
2 teaspoons chilli seasoning mix
3/4 cup (3oz) shredded Drafted reduced fat Cheddar cheese

Preheat oven to 350 degrees.  Sprayan 8 by 8 inch baking dish with butter flavored cooking spray.  In medium saucepan, cook asparagus in water until just tender, about 5 minutes, drain. Return asparagus to sacupan.  Add rice, tomato sauce, chili seasoningmix and 1/2 cup Cheddar cheese.  Mix gently to combine.  Por mixture into prepared baking dish.  Sprinkle remaining 1/4 cup Cheddar cheese evenly over the top Bake 25 to 30 minutes.  Place baking dish on a wire rack and let set 5 minutes.  Cut into 4 servings.

Diabetic: 2 Vegetable * 1 Starch * 1 Meat
BAKED PORK WITH SWEET POTATOES AND APPLESAUCE

4 (3 oucce) lean pork cutlets or tenderloins
3 cups (16 ounces) raw sweet potatoes, cut into 1/4 inch slices
2 cups unsweetened applesauce
1/2 teaspoon apple pie spice
1/4 cup Brown Suagr Twin

Preheat oven to 350 degrees.  Spray 8 by 8 inch baking dish with butter-flavored cooking srpay.  In a large skillet sprayed with butter-flavor cooking spray, brown pork on both sides.  Place browned pork in prepared baking dish.  Arrange sweet potatoe slices over pork.  In a small bowl, combine applesauce, apple pie spice, and Brown Sugar Twin.  Por applesauce mixture evenly over sweet potatoes.  Cover and bake 45 to 50 minutes or until sweet potatoes are tender.  Uncover and continue to baking 10 minutes.  Place baking dish on wire rack and let set 5 minutes.  Divide into 4 servings.
