Cajun Meals



                  Cajun Style Spicy Shrimp

       Yield: 6 Servings
      18 Large Shrimp, Peeled,Cleaned,Butterflied
          3 Bay Leaves
          2 Tbl Unsalted Butter Or Margarine
          1/3 Cup Beer
          1 Clove Garlic, Minced
          1 Tsp Lemon Juice
          1/8 Tsp Cayenne Pepper (Careful Maybe Less)
          Salt
          1/2 Tsp Pepper

Heat a sauce pan and add butter or margarine. Add shrimp and garlic. Stir until shrimp are coated with butter. Ad all other ingredients and stir to mix. Boil rapidly to reduce to half the volume. Remove the bay leaves and serve. Serve with pecan flavored wild rice and Merlion Chardonnay. (This is a great chardonnay if you can find it.) Cajun Banana Smoothie

                1 Large ripe banana, sliced Thin
                1/2 c Fresh strawberries sliced Thin
                1/4 c Skim milk (2%)
                1 ts Brown sugar
                1/2 c Banana yogurt
                1 oz Dark rum
                1 oz Banana brandy
                1/4 ts Orange peel grated

                GARNISH
                3 Slices banana
                3 Sprigs mint
                3 Whole strawberries

Place bananas & strawberries in a bowl and freeze. Remove after frozen & place in a blender. Add skim milk, yogurt, orange peel, & sugar. blend at medium speed until thick. Add rum & brandy. Pour into a chilled champagne saucer. Arrange strawberries,banana slices, & mint on long toothpicks. Rotate into drink & serve.
 


Yeola's Bread Pudding

           6 Servings Ingredient
           10 Slices Stale Bread
           1 Cup Pecan Pieces
           3 Eggs, Beaten
           1 Can (16 Oz) Fruit Cocktail/juice
           2 Cup Sugar
           1 Can Pet Milk (12 Oz)
           1/2 Cup Oleo
           1 Cup Water
           1 Cup Raisins
           2 Tbl Vanilla Butternut Flavouring

                                          Preparation

 Put everything in a large bowl and mix it up. Yeola says that she uses her hands to make sure it's well blended. Then turn into a greased 9 x 13-inch pan and bake in a 400-degree oven for 1 hour and 20 minutes.
