Hamberger Dishes
 

 

                     All-American Hot Dish
 
 

 Yield: 6 Servings                                  Category-Hamburger

          1 Lb Lean Ground Beef
          2 Cup Water
          1/2 Cup Onion; Chopped, 1 Md
          1 Tsp Oregano Leaves
          8 Oz Whole Kernel Corn, 1 Cn
          1/2 Tsp Salt
          8 Oz Tomato Sauce; 1 Cn
          1/4 Tsp Pepper
          1/4 Cup Ripe Olives; Pitted, Halved
          1 Cup Cheddar Cheese; Shredded
          4 Oz Noodles; Uncooked, Abt 2 C

 Cook and stir the meat and onion in a large skillet until the meat is brown. Drain off the excess fat. Stir in the UNDRAINED corn and the rest of the ingredients. TO COOK IN A SKILLET: Heat the mixture to boiling then reduce the heat and simmer, uncovered, stirring occasionally, until the noodles are tender, about 20 minutes. Serve hot. TO COOK IN THE OVEN: Pour the mixture into an ungreased 2-quart casserole. Cover and bake in a 375 degree F. oven for 30 minutes, stirring occasionally. Uncover and bake until the mixture thickens, about 15 minutes. Serve hot.
 
 


 
 

     Burgundy Burgers

               6 Ingredient

               1 1/2 Lb Ground Beef
               1/4 Cup Burgundy Or Other Red Wine
               1/4 Cup Onion; Finely Chopped, 1 Sm.
               1 Tbl Worcestershire Sauce
               1 Tsp Seasoned Salt
               1/4 Tsp Pepper
               1/8 Tsp Garlic Salt

                                          Preparation

  Mix all the ingredients together. Shape mixture into 6 patties, each about 3/4-inch thick. Broil or grill the patties 4-inches from the heat, turning once, to the desired doneness, about 10 to 15 minutes. Nice served on toasted buns with a favorite topping. See toppings. -----
 
 


 
 

  Caraway Burgers




Category = Hamburgers Main Ingredient =

               6 Ingredient

               1 1/2 Lb Ground Beef
               1/2 Cup Onion; Finely Chopped, 1 Md.
               1 Tsp Salt
               1 Tsp Caraway Seed
               1 Tsp Worcestershire Sauce
               1/4 Tsp Pepper
               1 Cup Beer; Any Brand

                                          Preparation

  Mix all the ingredients together except the beer. Shape mixture into 6 patties, each about 1-inch thick. Place the patties in an ungreased baking dish, 10 X 6 X 1 3/4-inches. Pour the beer over the patties, then cover and refrigerate at least 3 hours. (Meat may turn gray, but is ok) Remove patties from the marinade. Broil or grill the patties 4 inches from the heat, turning once, to the desired doneness, about 15 to 20 minutes. -----
 
 


 
 

      Creamy Beef-Noodle Combo

              5 Ingredient

               1 Lb Lean Ground Beef
               10 3/4 Oz Cream Of Mushroom Soup; 1 Cn
               4 Oz Mushroom Stem/pieces; 1 Cn
               1/2 Cup Green Bell Pepper; Chopped
               1 Cup Celery; Sliced, 2 Stalks
               1 Cup Milk
               1/4 Cup Pimento; Sliced
               4 Oz Noodles; Uncooked, Abt 2 C
               1 Tsp Salt
               1 Tbl Worcestershire Sauce
               1/2 Cup Onion; Chopped, 1 Md

                                          Preparation

  Cook and stir the meat and onion in a large skillet until the meat is brown. Drain off the excess fat. Stir in the UNDRAINED mushroom pieces and the remaining ingredients. Heat to boiling then reduce the heat and simmer, covered, stirring occasionally, until the noodles are tender, about 25 minutes. A small amount of water can be added if necessary.   Crunchy Teriyaki Burgers

               6 Ingredient

               1 1/2 Lb Ground Beef
               1/2 Cup Water Chestnuts; *
               1/4 Cup Soy Sauce
               1/4 Cup Orange Juice; Or
               1/4 Cup Sherry; Dry
               1 Clove Garlic; Minced
               1 Tsp Molasses Or Brown Sugar
               1/8 Tsp Ginger; Ground

                                          Preparation

  * Water chestnuts should be finely chopped. Mix the meat and water chestnuts together. Shape the mixture into 6 patties, each about 3/4-inch thick. Place the patties in an ungreased baking dish 10 X 6 X 1 3/4-inches. Mix the remaining ingredients together and pour over the patties. Cover and refrigerate for at least 3 hours, turning the patties once. Remove the patties from the marinade. Broil or grill the patties 4-inches from the heat, turning once, until the desired doneness is reached, about 10 to 15 minutes. Brush frequently with the leftover marinade. -----

               1 Catsup
               1 Horseradish
               1 Onion Slices Or
               1 Finely Chopped Onion
               1 Tomato Slices
               1 Process American Cheese Or
               1 Cheddar Cheese Slices

               --------- Peppy Cheese Filling ---------

               1/4 Cup Cheese; **
               2 Tbl Mayonnaise Or Salad Dressing
               1 Lb Worcestershire Sauce
               1/2 Tsp Salt
               1/2 Tsp Mustard; Prepared

                                          Preparation

  * Use one or more of these fillings in your hamburgers. Your choice. ** Use Processed American or Cheddar Cheese. Mix all ingredients except the fillings. Shape mixture into 12 thin patties, each about 3 1/2-inches in diameter. Top each of 6 patties with a filling, spreading to within 1/2-inch of the edge. Cover with a remaining patty, sealing the edges firmly. Broil or grill patties 4-inches from the heat, turning once, to the desired doneness, about 10 minutes. PEPPY CHEESE FILLING: Mix all ingredients. -----
 
 


 
 

   Hamburger Stroganoff

               1 Lb Lean Ground Beef
               1 Tsp Beef Bouillon; Instant
               1 Clove Garlic; Minced
               1/4 Tsp Pepper
               3/4 Tsp Salt
               1 Cup Water
               4 Oz Mushroom Stem/pieces;drained
               2 Cup Noodles Or Rice; Cooked, Hot
               1 Cup Dairy Sour Cream
               3 Tbl Unbleached Flour
               1/2 Cup Onion; Chopped, 1 Md

                                          Preparation

 Cook and stir the meat, onion, and garlic in a large skillet until the meat is brown. Drain off the excess fat. Mix in the flour, bouillon, salt, pepper and the can of mushroom stems and pieces. Stir in the water and heat to boiling, reduce the heat and simmer, covered, for 10 minutes. Stir in the sour cream and heat until just hot. Serve over the noodles or rice, if desired, and garnish with chopped parsley, if you wish. -----

               1/2 Cup Onion; Chopped, 1 Md
               16 Oz Tomatoes; 1 Cn
               1/2 Cup Celery; Chopped
               1/2 Cup Water
               1 1/2 Tsp Salt
               1/4 Tsp Pepper
               1/8 Tsp Basil Leaves
               1/8 Tsp Marjoram Leaves
               1 1/2 Cup Fine Noodles; Uncooked, 3 Oz

                                          Preparation

 Cook and stir the meat and the onion in a large skillet until the meat is brown. Drain off the excess fat. Stir in the tomatoes (with the liquid) and remaining ingredients, stirring to break up the tomatoes. Heat to boiling, then reduce the heat and simmer, covered, stirring occasionally, until the noodles are tender, about 20 minutes. A small amount of water can be added if necessary.                1 Cup Rice; Regular, Uncooked
               2/3 Cup Green Bell Pepper; Chopped
               16 Oz Stewed Tomatoes; 1 Cn
               5 Bacon Slices; Crisp,Crumbled
               2 Cup Water
               1 Tsp Chili Powder
               1/2 Tsp Oregano Leaves
               1 1/4 Tsp Salt
               1/8 Tsp Pepper

                                          Preparation

  Cook and stir the meat and onion in a large skillet until the meat is brown. Drain off the excess fat. Stir in the remaining ingredients. TO COOK IN A SKILLET: Heat the mixture to boiling then reduce the heat and simmer, covered, stirring occasionally, until the rice is tender, about 30 minutes. (A small amount of water can be added if necessary.) TO COOK IN THE OVEN: Pour the mixture into an ungreased 2-quart casserole. Cover and bake at 375 degrees F, stirring occasionally, until the rice is tender, about 45 minutes. Serve hot. -----

               2 Drops Hot Pepper Sauce; Optional
               1/3 Cup Bread Crumbs; Dry

                                          Preparation

  Mix all ingredients together. Shape mixture into 4 patties, each about 3/4-inch thick. Broil or grill patties 4-inches from the heat, turning once, to the desired doneness, about 10 to 15 minutes. -----
 
 


 

            Panhandler Salisbury Steak




          Yield: 8 Servings
          Category-Ground

          2 Bouillon Cubes
          1 Soup Can Milk
          1 Large Egg,Beaten
          1/2 Cup Fine Dry Bread Crumbs
          1/2 Cup Hot Water
          Baking Powder Biscuits
          1 Can Cream Of Mushroom Soup
          1 Tbl Worcestershire Sauce
          1 1/2 Lb Lean Ground Beef If Desired
          (Cream Of Celery) Celery Salt
          1 Small Onion,Minced

 Dissolve bouillon cubes in hot water.Mix this in with meat, onion,crumbs,seasonings and beaten egg.Be careful with additional seasonings as cubes and Worcestershire sauce may be quite enough. Shape into eight patties and place in a shallow baking dish,8 x 11".Beat milk with cream of mushroom soup (or cream of celery). Set aside. Preheat oven to 350 degrees.Bake patties about 15 minutes or until lightly browned,then cover all with the blended soup mixture.Top each patty with the prepared baking powder biscuit, if desired.Return to oven for an additional 15 to 20 minutes or until biscuits are nicely browned.Makes 8 patties. -----
